Washed Sidra ranging from the well known farm El Diviso.


Tastes of: strawberry, guava, white tea with floral and herbal hints. 

A juicy and clean experience of a wonderfully complex coffee. 


The process:
After harvesting, the cherries are floated to remove impurities. The ripe cherries are selected manually before they go into an anerobic fermentation. After 36 hours the coffee depulped and oxidized before another anerobic fermentation taked place for 48hours. The coffee is then washed with water and dried in a canopy and mechanical for 12 days at an 35 degree celcius temperature. 
 

Even though the process is long, the Sidra comes out as beautifully clean and juicy without any funky traces. 

 

The farm:
5 years ago, Nestor Lasso and his brother Adrian took over thefamily farm and branched out into specialty coffee andexperimentation rather than growing coffee like their parents. El Diviso brings together the two-family farms, El Diviso(Nestor and Adrian Lasso) and Las Flores (Jhoan Vergara),close to the town of Pitalito, in the Huila region of Colombia.
