About the coffee
This San Ramón variety is grown by Mauricio Rosales, owner of the farm La Maravilla. The plot Los Arroyos is located at 1650-1800 masl. in the «Huehue» (Huehuetenango) department of Guatemala.
Process
The coffee dry fermented in tanks for 36 hours before it is sun-dried on patios for 12–14 days. Simple, but effective.
About the plot and farm
Los Arroyos is one of six plots of the farm La Maravilla (“the wonder”) on which they grow Caturra and San Ramón. “Los Arroyos” translates to “the creeks” in Spanish, which is the name of the community surrounding the town.
The Rosales family cares a lot about preserving the local environment at La Maravilla, and are active members of the Private Nature Reserve Association of Guatemala. Some parts of the estate is reserved as natural forests of local tree species, which in return provide abundant natural water resources to the farm. On the farm, they grow several types of fruit trees. All the water used at the farm is treated and recycled and chemical herbicides are avoided.
