  • What's your roast like?
We roast decently light. To us, the uniqueness of each coffee is important. We believe a light roast profile showcases this the best. However might have noticed that we have espresso and filter roasts of the same coffee, in these cases the espresso roasts will be a little darker roasted than the filter to insure good solubility for your espresso. But they are still considered a light roast.
  • How do I brew my filter coffee?
Use your go-to recipe, or use our go-to pour over recipe: 16g coffee (ground for filter: 27 clicks on a commandante) to 240g water. 4 equal spiral pours of 60g every 40 seconds. Please use a water with less than 150mg/l with less than 80mg/l bicarbonate if possible. Coffee is mostly water and we cannot stress the importance of utilizing the right water enough. We use abaca filters for this recipe, for recipes using Sibarist filters check out their webpage.
  • How do I brew my espresso?
The espresso beverage has many variables that can go wrong, so please take care in every step of your preparations. Use clean equipment Make sure your coffee is well and evenly distributed and tamp flat and consistently. We tend to use 18g-19g of coffee in our baskets to about 42 grams out in the cups in about 25 seconds. We set our espresso recipe on a classic 9 bar profile. Adjust grind size, time, water temperature, and pressure if you want to play with different parameters in order to explore the coffee fully.
